THE USE OF TIGERNUT MILK DIMINISHES THE "BAD" CHOLESTEROL

The professor of Microbiology of the Politécnico de Valencia University, Enrique Hernandez, has emphasized today the curative and antioxidant properties of the tiger nut milk, which content in vitamin E diminishes the content of cholesterol LDL, which is harmful to health.

The scientist has mentioned the nutritive value of the tiger nut milk because of the big amount of oleic acid that it owns “rather more than the olive oil”.

The professor Hernandez has explained that the tiger nut milk it is recommended for diabetics due to its nutritional values and presence of sucrose, it is even better than the chocolate “ideal for children, old and sport people”

The professor Enrique Hernandez is the coordinator of a conference called “Tiger nut from Valencia and Tiger nut milk from Valencia. Tradition and health” which takes place today in the Valencia Foundation of Advanced Studios, and several tens of scientists, doctors, people who make the tiger nut milk, businessmen and farmers go there.

The minister of agriculture of the Valencia Government, María Ángeles Ramón-Llin, has exposed in the opening ceremony that “farmers from L’Horta Nord are the ones in Europe who have reached, after several centuries and a lot of efforts, ideal grounds for the tiger nut cultivation.

In her intervention, the minister, has emphasized that the tiger nut it is produced nowadays in 16 different areas of L’Horta Nord, the only place in Europe which it is cultivated.

Likewise, Ramón-Llin, has referred to the need of promotion of the product’s quality from Valencia “to give response to the inhabitant’s demands and also to become better the competitiveness in the sector”

She has remarked that knowing the need off recognize the quality of this important product from Valencia, her department recognized in 1995 the origin denomination of the product, approving its regulations.

During this conference it will be known the results of the healthy properties of the tiger nut from Valencia and the tiger nut milk in different levels.

That study has been done for a doctor’s team from Valencia after a complete analysis, in the Politécnico de Valencia University and Valencia University, from samples of tiger nut and tiger nut milk from Valencia.

In this conference it is discussed matters like “Tiger nut and tiger nut milk. Tradition and health”, “History and introduction to the cultivation”, “Production and selection of the vegetable product”, “Tiger nut milk and health”, “Tiger nut, tiger nut milk and stories from Valencia”, “From the tiger nut to the tiger nut milk” and “Microbiology and critical points”.
